Ingredients:
12 oz egg noodles
2 cups cooked chicken, shredded or diced
1 cup sour cream
8 oz cream cheese, softened
1 cup cottage cheese
1 can cream of chicken soup (10.5 oz)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
½ cup crushed Ritz crackers (optional topping)
2 tbsp melted butter (optional topping)
Directions:
Cook the Noodles:
Preheat your oven to 350°F (175°C). Cook the egg noodles in salted boiling water according to package directions until al dente. Drain and set aside.
Make the Creamy Mixture:
In a large mixing bowl, combine the softened cream cheese, sour cream, cottage cheese, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
Assemble the Casserole:
Add the cooked chicken and noodles to the creamy mixture. Stir until everything is evenly coated.
Layer and Top:
Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly. Sprinkle the top with mozzarella, cheddar, and Parmesan cheese.
Optional Ritz Topping:
If desired, mix the crushed Ritz crackers with melted butter. Sprinkle over the top of the casserole for added crunch.
Bake:
Place the casserole in the preheated oven and bake for 25-30 minutes, or until bubbly and golden brown on top.
Serve:
Let the casserole cool slightly before serving. Enjoy warm with a side salad or steamed vegetables.
