INGREDIENTS
- 1 pound smoked turkey sausage, sliced
- 2 cans white beans (such as cannellini or Great Northern beans), drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups cooked white rice
- Fresh parsley, chopped (for garnish)
INSTRUCTIONS
1. Prepare the Sausage
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Remove the sausage from the pot and set it aside.
2. Sauté the Aromatics
- In the same pot, add the chopped onion and minced garlic.
- Sauté until the onion becomes translucent, about 3-4 minutes.
3. Combine and Simmer
- Return the sausage to the pot.
- Add the white beans, chicken broth, dried thyme, and dried parsley.
- Season with salt and pepper to taste.
- Stir well to combine.
4. Cook and Thicken
- Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 20-25 minutes, or until the flavors meld together and the broth slightly thickens.
5. Serve and Enjoy
- Serve the dish over cooked white rice.
- Garnish with fresh chopped parsley.
